Craving authentic Mexican cuisine?  Since its grand opening on May 3rd, Mi Chola has been attracting locals and visitors alike. Located in the old Cantina and El Rincon on the 400 block of Main Street, it is the third generation of Mexican restaurants to occupy the space. Co-owned by Adam Malmgren and Darren Chapple, the vision for the restaurant is to serve authentic and traditional Mexican styles with contemporary blends. As noted in a recent AspenTimes article, the owners see the restaurant as being one of the most “affordable and approachable restaurants in town” (1).

Locals have also been eagerly anticipating the opening of BOSQ, a modern Mediterranean restaurant founded by Aspen-native Chef Barclay Dodge. The restaurant will feature “new world flavors” that appeal to the international traveler. Following the close of the Meatball Shack on March 31, the chef known locally for restaurants Pacifica and Mogador ignited his new chapter on the Mill Street pedestrian mall. Be sure to check out some of their mouth-watering entrees such as Shanghai Style Colorado Striped Bass and Traditional Peking Duck.

Craving a cocktail coupled with a VIP experience?  When you come to Aspen, quench your thirst with a drink at HOOCH, a cocktail lounge serving as the newest addition to Avalanche Cheese Company. Located at the 300 block of East Hopkins Ave, the lounge ushers in patrons yearning to try an exquisite cocktail and enjoy late-night entree specialties. End your night in the elite VIP club of Bootsy Bellows right down the street following its debut this summer. The celebrity VIP area will feature a glass wall framed by flat-screen tvs. The 2,200 sq.-ft space will be able to hold a whopping 120 guests. Whether you’re looking to host a private event or enjoy a night on the town, Aspen is a haven for internationally-renowned eateries.
